Cozy Cheese

Let’s pick up where we left off, shall we? Of course, I needed an afternoon snack yesterday. I found these mini peanut butter cups at Trader Joe’s the other day and they are dangerously addictive. So good though!

It was already twilight when I left the office (the time of day, not the movie), but I decided I needed a little fresh air after 9 hours of being a cubicle monkey. I laced up my running shoes and hit the roads for an easy 3-miles, ending at the grocery store. My legs are still feeling a little sore (whoaaa weekend 10 miles and power vinyasa yoga class), but much better than they were a few days ago. I picked up some grocery essentials and headed home to make the ultimate comfort food din-din.

I grilled two slices of Nature’s Pride whole wheat and some mozzarella cheese on my George Forman (grilled cheese flavor w/o the butter = brilliant!). And to keep my sammie company – a big bowl ‘o tomato soup with blue cheese crumbles. Because obviously I needed more cheese with my grilled cheese.

My favorite brand of soup is Amy’s organic tomato bisque, but sadly the Fine Fare in South Harlem did not have this variety (shocking, I know). I settled on some V-8 brand tomato soup and it was ehhhh. I wouldn’t buy it again.

And for dessert, I had a lot some pumpkin buttah straight out of the jar. Don’t judge.

I was asleep by 10pm and didn’t peep until nearly 8 o’clock the next morning. 10 hours of sleep + bottomless pit stomach? Whoaaa, what is goin’ on with me?

This morning I woke up HUNGRY and ready for breakfast asap. Along with my morning coffee, I mixed together about a cup of 2% greek yogurt, 1/4 cup dried cranberries & prunes, 1.5 cups of Nature’s Path gluten-free O’s, and big dollop of pumpkin butter. Pheww! Finally full….

I knew my afternoon would be filled with back-to-back meetings, so around noon I headed out for a quick 3 mile run (about 26 minutes). My legs felt pretty good, but the cold, dry air sort of took my breath away. I guess Autumn & Winter are here to stay!

When I got back to my desk, it was time for lunch! A huge, delicious Honey Crisp apple along with a spinach-hummus-mozzarella sammie on whole wheat.

My afternoon snacks were not the healthiest, but ehh…that happens. Sometimes popchips and mini peanut butter cups are more appealing than fruit :-)

Not sure what the remainder of the evening holds…I think it’ll be leftovers for dinner AGAIN. But I’ve also got my eye on a little baking project. My cookbooks + oven  just call my name on chilly, Autumn evenings….
