Those cookies look delish! I might have to give them a try. I really enjoyed some homemade pumpkin bread my mother whipped up this weekend. I may post her recipe on my site later - it was amazing stuff!

One of our interns at Harvard Common Press just made similar pumpkin cookies. They were also experimental and delicious-- they had the same fluffy consistency.

I'm a fan of all things pumpkin, but I love warm pumpkin bread, just out of the over, with a little butter and accompanied by a cup of tea. Great for this time of year.

I love all things pumpkin, so it's like asking a parent to choose a favorite child! I guess I'd say pumpkin oatmeal because having a little pumpkin to start my day just makes everything look a little brighter!

I love this! I just did the same thing yesterday with a rogue pumpkin that's been hanging around in my apartment. The microwave made it so easy. I look forward to seeing what you do with it, my pumpkin was pretty big!

Yum! I love the addition of white chocolate. I'm partial to dark chocolate and pumpkin myself but I'm willing to give anything chocolate a try
