Sausage & Pepper Pita Pizza

I’ve been craving pizza lately, so I decided to make some at home the other night. I used whole wheat pita bread, olive oil, reduced fat mozzarella, Nieman Ranch all-natural sweet italian sausage, sundried tomatoes, and red pepper slices. The mix of fiber, protein, carbs, and healthy fat was very filling! And best of all, this recipe was very easy to make – it only took about 20 minutes from start to finish.

Before the oven

Ingredients

  • 2 whole wheat pita breads
  • 2 tsp olive oil
  • 1/2 cup shredded reduced-fat mozzarella
  • 2 all-natural sausage links (or soy-sausage!), cut into pieces
  • 1/4 cup sundried tomatoes, re-hydrated
  • 1 large red bell pepper, sliced

Directions

Make sure the oven rack is in the lower 1/3 of the oven and preheat the oven to 400 degrees F.

Lay the pita breads on 2 large baking sheets. Spread each pita with about 1 tsp of olive oil, 1/4 cup shredded cheese, sausage, sundried tomatoes, and red pepper slices.

Bake until the cheese is bubbly and golden brown, about 6 to 8 minutes. Using oven mitts or pot holders, remove the sheets from the oven.  Eat and enjoy!
